Roasted asparagus is my favorite vegetable cooked my favorite way. When we are grilling on the patio we often cook it on the grill on an old cookie sheet.
It's one of our friends' favorite appetizers. I say appetizer because we always have it eaten before the meal is ready.
It's really simple, but always impresses our guests and I usually have to send the recipe home with them.
- 1 1/2 pounds fresh asparagus spears
- 1/2 cup extra virgin olive oil (may need more when grilling)
- Sea salt and fresh ground pepper to taste
- 1/4 cup melted butter, optional
Spread asparagus on baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt and pepper. Roast in 500 degree oven about 8-10 minutes until just tender. Drizzle melted butter over asparagus and serve.
